I was going to wait until I cooked again to see how well the knife sharpening went with Scott, but I got home and washed the 3 knives he did and it cut my sponge up pretty good. I always hand wash these knives with a sponge and it has never cut the sponge like that before so it must be good. It's a local one man business, make an appointment or call/text him and he was available right away, drove to his house and waited outside for about 10 minutes. Affordable, but just be prepared to buy new sponges.
